The Perfect Last Minute Gift: Peanut Butter Fudge

Wednesday, December 24, 2014

I first received this gift several years ago from a sweet friend and it has been a part of my holiday baking ever since. It's the perfect last minute gift, because it's quick, easy, homemade and absolutley delicious! One taste and you'll be hooked.
It only has four ingredients and is simple to make.
Anytime your making candy, it's always helpful to measure everything out before you begin and have everything ready that your going to need. In this case, you'll need an 8x8 dish that is buttered or lined with parchment paper.
Combine sugar and milk over medium heat, stirring occasionally, until a candy thermometer reaches the softball stage.
Once you reach the softball stage, turn off the heat and stir in the marshmallow creme and peanut butter until combined well.
Pour into the prepared dish. At this time, you can sprinkle with sea salt or add chopped peanuts if you like. The fudge will set up pretty quickly.
Allow to cool and then slice into bite size pieces.
I've packaged mine in pretty little boxes with parchment and ribbon.
Now my reward for making this wonderful stuff... I get to scrap the pot!

Peanut Butter Fudge

2 Cups Sugar
2/3 Cup Milk
1 Cup Marshmallow Creme
1 Cup Peanut Butter (smooth or crunchy...your choice)

Here's a Heart Rock for your Pocket:
When they saw the star, they were overjoyed. On coming to the house, they saw the child with his mother Mary, and they bowed down and worshiped him. Then they opened their treasures and presented him with gifts...  Matthew 2:10-11

Happy Christmas Eve,
Elaine
